Note that doing so will not remove the contact from your Contacts on your iPhone. It only removes the contact from the Phone app Favorites list.

Step one: You first need to launch the Phone app from your home screen. After that, tap Favorites at the bottom left of the screen

Step two: You now need to tap on the + button located at the top right corner of the screen. This will open up your Contacts list. You simply need to locate the contact you want to add to the Favorites list

Step three: Tap on that that contact. Once you do that, that phone number is now listed in the Favorites section.
